Segovia has very interesting Romanesque churches. Also, a visit to the nearby La Granja palace is worthwhile.  The most famous monuments are the Alcazar and the Roman aqueduct.

It is possible to visit Segovia either for the weekend, or as a busy day-trip from Madrid.

I have never spent the night, so I am not in a position to recommend a hotel.
